Baked Salmon    Video

In chapter five of “The Joy of Being Disorganized,” I talked about meeting Oprah and what fun it was to find out she was a self-confessed SHE (Sidetracked Home Executive)! It was a moment where a real life celebrity became just like you salmonstiland me. Dining can be like that too. You don't have to eat at the tables of Paula Deen, Rachael Ray or Giada to savor gourmet tasting food.

You can make it yourself! In this cooking video I show you one of the easiest ways to bake salmon-- that heart healthy source of omega-3 fatty acids. Doctors call it “brain food” but I just call it yummy.

Throw in a sprig of rosemary (which always goes well with almost any fish) and enjoy! Here's my simple recipe with video to follow.

BAKED SALMON

Cut into serving slices

1 tbsp. lemon juice

1 tbsp. olive oil

1 / 4 tsp. Lawry’s Seasoning Salt

Sprig of fresh rosemary

Sprig of parsley for garnish

Salt and fresh ground pepper to taste

Put salmon on heavy duty aluminum foil. Drizzle olive oil over fish. Sprinkle seasonings on flesh side of salmon. Rub rosemary between your hands over the salmon…then put the entire sprig on top of it. Fold up foil and seal tightly. Bake in pre-heated oven at 375 degrees. Set timer for ten minutes. When it dings, check to see if salmon is done. Don’t overcook! Leave foil open and put back in oven if fish isn’t done. Keep checking up to seven minutes (it all depends on how thick the salmon is.

When done, peel off skin if you desire (lots of people love the skin). If you don’t, you can still use it in a fish stock if you’d like.

To serve, you can add a sprig of parsley and some tarter sauce.

Get foil out of house right away so it doesn’t smell up the house!
